About this cake
This is a plain-and-perfect chocolate ganache cake: layers of moist chocolate sponge soaked in sugar syrup, filled with whipped dark ganache, then enrobed in a poured ganache coat that sets to a soft satin shine. The scroll and shell piping around the sides is done freehand in the same chocolate, so nothing on the cake is inedible plastic.
Ganache is simply couverture chocolate and cream — no compound, no vegetable coating. That is what gives this cake its deep cocoa flavour and the clean snap when the knife goes in. It is the chocolate cake to order when you want the chocolate itself to be the decoration.
