About this cake
Alternating bands of dark chocolate sponge and pale chocolate mousse are visible around the sides, finished with a ganache drip, piped mousse rosettes and broken chocolate bar chunks pressed into the crown.
Mousse is whipped chocolate and cream set with a little gelatine-free stabiliser, so it is airy where fudge is dense. If you find fudge cakes too heavy after a meal, this is the one to order instead.
