About this cake
The doli is the centrepiece: a small palanquin built from sugar paste with a curtained canopy, carrying poles and gold beadwork along the frame. It takes several hours on its own and is assembled off the cake, then set in place once the tiers are stacked.
Red and gold is the barat palette, and this cake is built for the wedding day rather than the mayoun. The red is a deep bridal shade rather than a bright one, and the gold is applied as edible lustre over piped detail so it reads metallic rather than yellow.
Because of the topper’s weight, we build this as a firm fondant-covered cake with internal support on multi-tier versions. It is the design most families choose when the cake is going on the main stage next to the couple.

How is the doli topper transported without damage?
It travels separately in its own padded box and we fit it to the cake at your venue. That way the palanquin’s canopy and poles never take the weight of a car journey.
Can this be made as a three-tier wedding cake?
Yes. Three tiers with internal dowel support is the most common version for a barat stage — the doli sits on the top tier and the red-and-gold detailing runs down all three.
